Banana Nut Bread

Ingredients

1-3/4 cup flour 1/3 cup non-hydrogenated shortening or butter 2-3/4 tsp. baking powder 1/2 tsp. salt
1 egg (slightly beaten)
1 cup mashed bananas
2/3 cup sugar

Directions

1. Sift flour, baking powder, and salt in bowl.
2. In another bowl add shortening and beat until creamy.
3. Gradually add sugar, beating until light and fluffy.
4. Add eggs and continue beating until thick and pale lemon colored.
5. Add flour mixture and bananas alternately, blending thoroughly.
6. Place in a greased loaf pan.
7. Bake at 350 degrees F for 50 to 60 minutes.
8. Let cool for 10 minutes.
9. Remove from pan and cool on wire rack
