Ingredients

2 cups cooked couscous
6 green onions, chopped
2 medium-sized tomatoes, seeded & cut into small pieces
1 cup cucumber, seeded and chopped
2 cups cooked garbanzo beans
1 cup parsley, chopped
1/4 cup olive oil
1/2 cup fresh lemon juice
2 cloves garlic, minced
1 tsp. Dijon mustard
1 tsp. ground coriander
1 tsp. salt
Freshly ground pepper

Directions

Mix first six ingredients and toss with dressing.
