Roger´s Mexican Rice

Ingredients

2 Tbsp oil
1-1/2 cups rice
1/3 to 1/2 medium onion sliced (or diced)
1 to 2 rings of bell pepper
1 small clove of garlic (minced)
1/2 tsp. comino
1 cup of chicken broth
3 cups of water
1 cup of tomato sauce
1/4 tsp. salt

Directions

1. Heat oil over medium heat in a skillet.
2. Brown rice, onions, garlic, chicken parts, and bell pepper.
3. Stir in chicken stock, water, comino, salt, and pepper. Bring it to boil, then lower the temperature and simmer covered for 22 minutes.
4. Check after about 10 or 15 minutes to make sure that it is not drying out. If so, add some more water, and lower heat. It is important that the lid remain on throughout the cooking (except as noted above)
