Ingredients
1 lb. of boneless chicken breast, diced
2 Tbsp. soy sauce
1/4 tsp. ginger
1/4 tsp. pepper
1/4 tsp. pepper flakes
2 Tbsp. peanut oil
1 garlic clove (minced)
3 cups of cooked rice
1 egg (scrambled and slightly cooked)
Directions
Combine chicken, Soy Sauce, Ginger, Pepper and pepper flakes. Mix thoroughly and set aside. Cook rice according to package directions. Set aside.
Scramble the egg and cook lightly (egg should be runny). When the rice is finished cooking, stir the lightly cooked (slightly runny) scrambled eggs into the Rice.
Heat the oil under high heat in a skillet (or wok). Sauté garlic in oil. Cook chicken mixture in garlic/oil mixture until done. Add rice and egg mixture. Stir well and cook for an additional 3 to 5 minutes.
Serve immediately.
Note: Substitute stir fry vegetables for the rice to make chicken stir fry
