"Back in 1975, a friend from work gave this recipe to me. She knew that these were my favorite cookies. These cookies are also known as Mexican Celebration Cookies or Mexican Wedding Cookies."

Ingredients

1 cup soft butter
1/2 cup sifted confectioners sugar
1 tsp. vanilla
2-1/4 cups flour
1/4 tsp. salt
3/4 cups nuts (pecans, walnuts, etc.)

Directions

Mix butter, sugar and vanilla thoroughly.

Sift together and stir in the flour and salt.

Mix in 3/4 cup of nuts.

Chill dough. Roll into one-inch balls.
Bake until set, not brown. While still warm, roll in confectioner’s sugar. Roll again when cool.

Bake at 400 ºF for 10 to 12 minutes.
